Celebrate M&M Day

Happy National M&M Day! They’re great by themselves, but I prefer them in cookies. The recipe I use is an adaptation of the classic recipe found right on the bag.
Ingredients
2½ cups all-purpose flour
1 tsp salt
1 tsp baking soda
1 cup softened unsalted butter
1 cup packed brown sugar
1/2 cup granulated cane sugar
2 eggs
2 tsp vanilla extract
2 cups M&Ms
Instructions
Preheat oven to 375º F. Line cookie sheets with parchment paper or spray sheets with cooking spray. In a medium mixing bowl, stir together the flour, salt, and baking soda. Set aside. In a large mixing bowl, beat the butter and sugars together with an electric mixer until light and fluffy. Be sure to scrape down the sides of the bowl with a spatula. Beat in the eggs and vanilla until creamy. Turn the speed of the mixer to low and add flour mixture just until blended. Gently stir in 1 cup of the M&Ms by hand with a spoon so that the shell on the M&Ms don’t crack. Drop dough by rounded tablespoons onto prepared cookie sheets. Bake cookies in the middle rack of the oven for 10 to 12 minutes or until the cookies are golden brown around the edges. Remove from the oven and let rest for 5 minutes before transferring the cookies to a wire rack. NOTE: If you want more candy in your cookies (and who doesn’t 😉) gently press in remaining cup of M&Ms into cookies before cooling.
